I want to get rid off this option or to set it on 75% because it leaves 3 of my 4 processors idle for a lot of time.
It isn't possible for me to do that by chnge of my processing options, I set it to 94% and there was no change in the real preferences after actualizing from the project server.
Who could give me a hint how to do this ?

Set that option to 0 (zero).

You should do this on both your account page on the project's web site, and in the menu of your BOINC manager. That way it won't matter which one you end up with from time to time.
